Corn Hogs!

Hi Everyone!

The time really flies, and it is time once more for the Super Bowl. This is the one day of the year I let my family eat all the comfort/junk food they want, and it seems to work, because they don’t seem to want junk by the time dinner comes, reaching for the healthy dinner that will be ready by the end of the game.

One new snack is Bill’s new favorite! They are called CORN HOGS

You will need small wooden skewers, some nice cooked ham, or spam sticks. (I really love spam being a poor baby boomer it just tastes like home to me.)




First cut ham or spam into little sticks. Then skewer them on dry wooden skewers. Put cooking oil into deep enough pan to submerge the sticks and heat to 380’ or medium high.
While oil is heating, make the batter for the Hogs.

½ cup flour
½ cup corn meal
1 tsp salt
1 tsp baking soda
1 Tbsp sugar
1 tsp mild chili powder
¼ cup buttermilk
1 Tbsp water

(Make buttermilk by adding one teaspoon of vinegar to ¼ cup milk and let stand a few minutes after stirring very well)

Mix all together in bowl until smooth. Make sure to eliminate lumps. Batter will have texture due to the corn meal.

Now batter only enough sticks to fry easily, I only fry two at a time so I can turn them quickly and let fry on both sides. Dip meat sticks into batter and drop into hot oil. Turn right away and maybe turning a few times to make sure they fry evenly. When fried until brown, lay the Hogs on a layer of paper towels to blot extra oil from them.



In microwaveable bowl put a jar of Tostitos Salsa con Queso and heat on high for 40 seconds. Stir and repeat for 20 more seconds until hot. Use to dip the Corn Hogs in when enjoying them with your favorite game.
