Surprise Meatloaf!

Hello everyone! This year has gone by so fast. Christmas came upon us sooner than usual (It seems!)

For those of us on a budget, I have pulled this recipe out for Christmas dinner. We all wish we could afford prime rib, but for those of us who can not afford the roast, I really think this meat loaf is a nice meal. You can serve it with potatoes au gratin, peas, and a nice green salad. This is what we are having.

Surprise Meatloaf

1-1/2 lbs. organic ground beef (I get this at Costco)
2 ranch fresh eggs
1/2 cup bread crumbs (Progresso Italian style)
1/3 cup diced onion
2 cups cheddar cheese (cut into sticks)
1/2 cup ketchup divided (you may need more depending on how much of a topper you like.)
1 tsp. salt 1/2 teaspoon ground black pepper
1/2 tsp. mild paprika
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/4 tsp red pepper (Chipotle powder can be used)

Put all ingredients in large enough bowl to mix all except half of the ketchup and the cheese.

Mix all ingredients just until all is incorporated and separate the mixture in half. Place half of the meat in a loaf pan, pat down the center to make room for the cheese inside, then lay cheese sticks throughout the bottom, keeping it in from the sides of the loaf pan.

Using the other half of the meat, cover the first half and crimp the top into the bottom so the cheese stays in the center while baking.

Place the rest of the ketchup over the top and spread it evenly over the loaf.

Bake in a 350′ oven for 45 minutes to one hour depending on your oven. Make sure your meat thermometer reads 160′ when inserted into center of the loaf.

Let rest for 10 mintes. Serve

Optional* Before baking you can lay a few slices of pickled jalapeño along the top.
