Blue Cheese Nachos

You won’t believe how decadent this nacho recipe is. Serve it as a great starter. I like a nice glass of champagne with these extremely tasty nachos. Make sure whoever you serve this to likes blue cheese or they will not enjoy these as they are very blue-cheesy. Scrumptious!

You will need:

1 bag of your favorite corn chips (unflavored)
4 slices crispy bacon, crumbled
1 small can sliced black olives
4 green onions, thinly sliced
1/2 cup crumbled or grated blue cheese ( I like a dry blue cheese and I grate it)
1 cup grated Monterey Jack cheese
1/3 cup or so pickled sliced jalapenos

Make one layer of chips on an oven safe plate so that there are no openings in the layer that cheese can fall through. Use 1/2 of all the toppings to cover the first layer of chips.
Now put the first layer in oven under the broiler or toaster oven set to broil. Do not let this layer brown too much.

Now pull it out and make another layer of chips over the first hot layer and top with the rest of the toppings. Put it back under the broiler and lower the rack if it is browning the chips faster than it is melting the cheese. Make sure the cheese is all melted and edges of chips are toasty brown and it is done. I serve salsa on the side so the chips do not get soggy.
