Spam Apple Upside-Down Cake

This recipe was inspired by my many trips to Hawaii. If you have ever been there you will get it…

Spam Apple Upside-Down Cake

1 8-1/2-ounce can sliced pineapple
3 tablespoons butter
1/2 cup brown sugar
1 egg
1 teaspoon vanilla
1 cup sifted organic wheat flour (not whole wheat)
1-1/4 teaspooon baking powder
1/4 teaspoon salt
1 12oz can SPAM classic

Drain pineapple reserving syrup. Halve pineapple slices. Melt butter in 8x8x2-inch cake pan. Add brown sugar and 1 tablespoon of the reserved pineapple syrup. Add water to remaining syrup to make 1/2 cup. Arrange pineapple and candied cherries with stick-like slices of SPAM in bottom of cake pan.

Cream together shortening and sugar until light. Add egg and vanilla; beat until fluffy. Sift together dry ingredients; add, alternating with the 1/2 cup pineapple syrup, beating after each addition. Spread over pineapple and spam and maraschino cherries in bottom of cake pan.  Bake at 350° for 40 to 45 minutes.  Cool for 5 minutes; invert on large plate. Serve warm. Enjoy!

Hope you like this different and “all mixed up” recipe.  The SPAM will be like candied pork.  I love this, hope you do to.
